Squirreld away


I got half a liter of frozen lingonberrys from my grandmother the other day and I just couldn't resist making Klappgröt. Klappgröt is a Finnish dessert made of lingonberrys, sugar, semolina and loads of whisking. It almost gets a bit like a mousse in consistency (after about 20 minutes with an electric mixer) and have sweet but with just a hint of bitter taste. I just love it with a bit of milk, it really reminds me of my childhood and is well worth all that whisking! Let me know if anyone is interested in the recipe!

      Here is the recipe:
      Servings: abut 8
      Preparation time: 35 min

      Ingredients:
      1l Water
      5 cup Lingonberry
      2 cups sugar
      1.5 cups semolina
      1 teaspoon vanilla (or vanilla sugar)

      Boil water, lingonberries and sugar for 15 min, then strain the peels away. Pour the juice back into the saucepan, whisk in the semolina and cook about 6-8 minutes. Let it cool, whisk in the vanilla and whisk it until it gets fluffy and light pinkish. Serve it cold or semi cold with milk.
